TOASTED GOFIO LIQUEUR

Raw Materials: Gofio flour, pomace brandy, sugar, and caramel

Production: This toasted gofio liqueur is handcrafted to capture the aroma of the various grains that make up gofio flour. Gofio flour is macerated in pomace brandy for several months, allowing the aroma of the gofio to slowly infuse the liqueur. During maceration, the mixture is stirred daily to ensure optimal contact between the flour and the brandy. After maceration, the mixture is filtered to remove the gofio flour. A caramel is then prepared with water and sugar and left to cool to room temperature. Finally, the caramel is slowly added to the macerated mixture, stirring constantly to achieve a homogeneous consistency. This process not only sweetens the liqueur but also imparts a light golden hue. Once produced, it will rest for a period of time before bottling.

Organoleptic Characteristics:

• Visual Phase: Clean, golden, and bright appearance.

• Olfactory Phase: On the nose, it stands out for its intense and pronounced aroma of Gofio over a background of subtle notes of vanilla and caramel.

• Gustatory Phase: Smooth entry on the palate, although the presence of the well-integrated alcohol is perceptible. Long and deep Gofio finish.

Serving Temperature: 6-8ºC. It is recommended not to serve frozen.

Best Before Date: This liqueur maintains its organoleptic characteristics for up to 5 years after its bottling date. Once opened, keep the bottle in the refrigerator, not the freezer, to avoid altering the product's original organoleptic characteristics.
