PRESAS OCAMPO RED WINE OWN VINEYARDS
Type: Red Wine Own Vineyards
Brand: Presas Ocampo
Producer: Bodegas Presas Ocampo
Volume bottle: 75 cl.
Varieties: Listan negro, Merlot, Syrah
Production method: Made with grapes from our own vineyards, which are grown with deficit irrigation techniques to achieve optimal maturation, both alcoholic and polyphenols (phenolic maturity). The harvest begins in September and ends in October, in the later varieties. The grapes are harvested manually and transported to the winery in boxes of 20 kilos. The different varieties are processed separately, with more or less long macerations depending on the vintage and the variety. Fermentation takes place at a controlled temperature between 23 and 26 degrees. At the time of discovery, the yolk must is bled, which is the only one we use when assembling this wine. At the end of its fermentation it is statically clarified (without the addition of fining agents), it is stabilized by cold and finally amicrobically filtered for bottling.
Tasting note: In visual phase it is clean and bright, with violet tones, red-garnet in color and high robe. On the nose it is frank with fruity notes, ripe fruit, hints of forest berries and spicy touches. Its pass through the mouth is meaty, broad and persistent, with an elegant aftertaste.
Gastronomic uses: It pairs well with red meats and semi-cured cheeses. It should be served between 15º and 17º degrees to obtain its maximum organolectic potential. It is recommended to place the bottle in a cool place upside down. Consume preferably within two years.
Analytical: Alcoholic degree 13.50% vol. Total acidity 5.5 gr. in tartaric. PH 3.6.
Bodega Presas Ocampo is due to the clear commitment of the businessman from Tacoronte Mr. Domingo López Arvelo, who after many years dedicated to the business world, begins to feel the need to return to his origins, to his childhood. To those years in which he learned from his Father the care and respect for the earth. D. Domingo López, son, grandson and great-grandson of Winemakers, from his childhood he has been duped into the world of wine culture. The hard work of the vineyard (completely handmade in those years), the icy Tacoronteras mornings, are enlivened thanks to the sips of the wine, the fruit of the earth, the sweat, the work and the careful care that is dedicated to it all year round, and is that so much effort was rewarded. Those memories, that attachment to the land and traditions are what lead D. Domingo López to re-undertake that activity that linked him so much to his father, to the land and to wine. With the knowledge of the traditional elaboration, the local varieties and by coupling the technological advances, one of the most modern Canarian wineries is launched, with the intention of obtaining the wine that best remembers the one of yesteryear.
The Presas Ocampo winery is a family winery with a simple typical Canarian structure, well known for the traditional architecture of the area, taking advantage of the reduction in temperature provided by the burial, it was decided to bury most of the facilities for the production and wine maturation. On the other hand, the construction, on the ground level, reinterprets the construction of warehouses in the shape of a ship.
Presas Ocampo has a winery, of different denominations, different in shape, but very similar in terms of substance: The search for quality above all else. Thus, Presas Ocampo, has a winery in the heart of Tacoronte (S / C de Tenerife) where its famous red crianza and aged reds are made.
